Creamy Broccoli and Cannellini Bean Soup – Vegan

This Creamy Broccoli and Cannellini Bean Soup is a nutritious and healthy recipe made with all natural and vegan ingredients.

Perfect for a light dinner, I like to serve it with a sprinkle of sunflower seeds and an extra drizzle of extra virgin olive oil.

Ingredients (serves 4):

  • 1 kg of broccoli
  • 480 g canned cannellini beans (drained)
  • 4 tbsp extra virgin olive oil
  • salt and black pepper
  • 2 tbsp sunflower seeds (optional)

Wash and boil the broccoli until tender. Drain. Add the cannellini beans, salt and pepper

Blend until creamy adding about 300 ml of water (check based on the consistency you wish to get. I like my soup quite creamy). Last stir in 4 tbsp of extra virgin olive oil.

Serve with an extra drizzle of oil and a sprinkle of sunflower seeds.
