Avocado, Oats and Chocolate Chip Cookies

Here we go with another healthy recipe for tasty cookies! This one calls for avocado instead of butter and oil. I’ve become addicted to healthy baking, it’s my new obsession. Good way to enjoy sweet treats without feeling guilty.
Ingredients (makes 12 cookies):
- 3/4 cup quick oats
- 1/2 cup all purpose flour
- 1 whole egg
- 1 whole avocado (mashed, about 1/3 cup)
- 1 tbsp coconut oil
- 1 tsp baking powder
- 1/2 cup chocolate chunks
- 1/4 cup light brown sugar
Remorve skin and central pit from the avocado.
Transfer it into a bowl of your electric mixter with 1 tbsp of coconut oil and stir until creamy. Add the sugar and mix until combined then add the egg and stir.
Incorporate oats, flour and baking powder and still just enough so that all ingredients come together.
Add the chocolate chunks and stir them into the batter.
With an ice cream scoop, portion out balls of batter.
Bake in pre-heated oven at 180 for about 12-15 min. Remove from the oven and let the cookies cool down on a wire-rack.
These cookies are soft and not too sweet, which makes me love them!
