Clementine-Ginger Quick Bread
Sweet, soft and super moist quick bread with clementines and spicy ginger.

Fruit stand are just full of clementines these weeks. The fruit of winter with so many good health benefits. I had got a bow full of clementines at home which were screaming my name so I decided to use them to make a sweet quick bread. The extra kick? The ginger which gives the bread a very interesting twist.
The bread is super moist and soft with a sweet glaze. Here is the recipes 🙂
Ingredients (makes one loaf):
- 10 clementines or tangerines
- 3/4 cup heavy cream
- 1 tablespoon pure vanilla extract
- 2 cups all-purpose flour, plus more for pan
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 120 g unsalted butter, plus more for pan
- 3/4 + 1/4 cups sugar
- 2 tbsp grated fresh ginger
- 2 large eggs
Pre-heat oven to 180 C. Butter and flour a 5by9 in loaf pan. Wash some clementines.
Zest about 4-5 to get 1 tbsp of zest.
Grab some fresh ginger, cut off a 1 inch piece and juice it using a garlic press.
Place ginger, zest, butter and 3/4 cup of sugar in a mixing bowl
Beat on medium speed until creamy. Add the eggs, one at a time
In a separate bowl collect 1/4 cup + 2/3 cup of clementine juice and segments the remaining clementines. Set the 1/2 cup aside.
Add the cream and vanilla to the clementine juice. Stir
In an other bowl combine flour, baking powder and salt. Reduce speed of mixer to low, and beat flour mixture into butter mixture in 3 additions, alternating with cream.
Fold in clementine segments
pour into pan gently smoothing the top
Bake for 55 min. Meanwhile, bring 1/2 cup clementine juice and 1/4 cup sugar to a boil in a small saucepan over medium heat. Reduce heat, and simmer for 3 minutes
Remove bread from oven, poke top all over with a skewer
brush with the clementine syrup. Transfer pan to a wire rack. Let cool completely
Slice up and serve next to a hot cup of lemon ginger tea!
