This Rustic Orange and Ricotta Cake is made with whole wheat flour, grounded orange and soft ricotta. A sweet and whole treat!

It is perfect to dip in your hot cappuccino in the morning as well as served with a side of orange custard.
To make this cake we will blend a whole orange together with the egg yolks, sugar and oil. Then we will add the whole wheat flour, baking powder and at last we will fold in whipped egg whites.
- 180 g whole wheat flour
- 125 g ricotta
- 2 eggs
- 120 g light brown sugar
- 1 tsp baking powder
- a pinch of salt
- 75 g oil
- 1 whole organic bloody orange
Separate the egg yolks from the egg whites. Whip up the egg whites firmly. In a blender blend 1 whole orange with the egg yolks, sugar and oil.
Add the ricotta and blend it in for a few seconds. Transfer the mixture into a bowl and gently mix in the whole wheat flour, baking powder and salt. Then slowly fold in the whipped egg whites.
Transfer into a baking pan which you have lined with parchment paper and bake in preheated oven at 180 C(static) or 170 C(ventilated) for 45-50 min or until a tooth stick placed in the center comes out dry.
Let the cake cool down completely, then slice it up and serve it!
