The Pie with Lemon Custard and Stuffed Plums is made with a flaky crust filled with sweet lemon custard and plums staffed with almond flour, coconut sugar, cinnamon and coconut oil, baked and served warm!

- 1 pie crust
- 1/2 portion of my lemon custard
- 5 plums
- 3 tbsp almond flour
- 2 tbsp coconut flour
- 1 tbsp ground cinnamon
- 3-4 tbsp melted coconut oil
Wash the plums, cut them horizontally half-way through, remove the central pit.
In a bowl combine the almond flour, coconut sugar, cinnamon and slowly pour in the coconut oil, just enough to get the mixture coming together.
Fill up the plums using the mixture
Roll out the pie crust
Fill it up with the lemon custard
Then lay in the staffed plums, cut up. If you have some leftover dough from the crust you can cut out some hearts and lay them around on top of the custard and plums
Bake at 180C for about 30-40 min. When ready, remove from the oven and serve warm (not hot!).
