Blueberry Cauliflower Porridge – Vegan and GF

The Blueberry Cauliflower Porridge is a nutricious, healthy and low carb alternative to the traditional oatmeal porridge.

If you like my first recipe on Paleo cauliflower porridge, you are going to go bonkers over this one, which features blueberries, almond butter and coconut yogurt!

Ingredients (serves 2):

  • 120 g cauliflower rice
  • 180 g almond milk
  • 10 g GF oat flour
  • dash of cinnamon
  • 80 g fresh blueberries
  • 2 tbsp erythritol (optional)
  • 1 tbsp creamy almond butter
  • 2 tbsp greek coconut yogurt

In a saucepan combine cauliflower rice, almond milk, blueberries, cinnamon and FG oat flour

Bring to a simmer and cook on low stirring with a whisk for about 10 minutes.

Turn off the heat and stir in coconut yogurt and almond butter.

Pour into 2 jars or bowls and refrigerate for a few hours.

Serve it up with some fresh blueberries and Paleo granola!
