My nut butters are getting a lot of attention on my IG profile (the_fit_mediterranean). Here on the website you can really find lots of recipes to easily make nut butters at home.
Today I am going to share with you how to make almond butter with coconut. Super simple and super delicious!
We will need to activate, peel and toast our almonds! Activating nuts and seeds is essential to allow us to properly digest them and get full benefits from the minerals contained in them (zinc, magnesium, calcium).
- 250 g almonds
- pinch of salt
- 50 g dry coconut
- 2 tbsp coconut oil (optional)
The night before (or even better 24h before) place almonds into a jar filled up with water and a pinch of salt.
Then rinse and remove the peel, it shall come out quite easily, if not, add a bit of warm water. Next toast your almonds into your oven at 150C
Place all ingredients into a food processor and blend until creamy. The more you process the almonds, the runnier your nut butter will be. I like mine to be very liquid so I let it go for a bit longer. The coconut oil is optional but highly recommended since it does help to intensify the coconut flavour.
Store the butter into clean jars at room temperature.
Enjoy spreaded on toast, drizzled over pancakes and French toasts or with some fresh fruits!
