Rose Pie | Gluten-free & Dairy-free

Pie crust rolled up and shaped like a rose, filled with jam. Gluten-free and dairy-free!

Today I am going to share with you an original and easy way to serve pies. The crust, made with a mix of gluten-free flours and no dairy, is rolled up into a rose-shape. So pretty!

For filling I have used apricot jam, but chocolate nut butters (like my oil-free and sugar-free nutella) would fit just fine!

Ingredients:

  • 125 g buckwheat flour
  • 125 g rice flour
  • 50 g corn starch
  • 3 g canton gum
  • 70 g coconut sugar
  • 2 whole organic eggs
  • 50 g coconut oil
  • 3 g cream of tartar
  • 65 ml milk
  • zest from 1 organic lemon
  • jam

In a large bowl combine flours, sugar, zest of lemon, xantan gum, cream of tartar, corn starch. Pour in melted coconut oil and stir with a fork

Next add eggs and milk and mix until you get a smooth dough. Cover with plastic wrap and refrigerate for 1h.

Roll out dough between 2 sheets of parchment paper then cut out strips 5 cm wide.

Spread a thin layer of jam at the center of each strip. Start rolling up the first strip, then place it at the beginning of the next strip and continue rolling. Repeat until you finish all the strips of dough. Place your “rose” into an oiled and dusted with flour pie pan

Bake in pre-heated oven at 180 C for about 45-50 minutes

Let your “rose” cool down completely, then dust it with powdered sugar then serve!
