Flaky chocolate pie crust with a creamy filling, gluten-free and dairy-free, easy to make and super yummy!

On February 3rd was my dad’s 70s birthday and this is the cake I made for him. He LOVES pies, and in particular he LOVED this one.
A crunchy chocolate shell with a creamy filling of raspberry jam and chocolate cream. I decorated it with fresh raspberries and some sliced almonds. Pretty, isn’t it?
Here is the recipe! Try making it. I am sure you will fall in love too!
for the crust
- 200 g rice flour
- 60 g potato starch
- 20 g cornstarch
- 3 g Xanthan gum (optional)
- 1 egg yolk
- 1 whole egg
- 120 g coconut sugar or brown sugar
- 80 g oil
- 30 g dark unsweetened cacao powder
for the filling
- 1 whole egg
- 80 g coconut sugar or brown sugar
- 60 g corn starch or potato starch
- 100 g dairy-free dark chocolate (80%)
- 150-180 g raspberry jam
- 300 g soy milk or almond milk or rice milk
- Fresh raspberries
- Sliced almonds
For the crust in a bowl whisk egg yolk, egg, sugar and oil. Add the dry ingredients and mix using a spoon
Roll out the dough on a sheet of parchment paper then lay it inside of an 8inch springform pan (I used the one where I make cheesecakes). Spread the raspberry jam at the bottom of your pie shell, cover with plastic wrap and refrigerate while you make the chocolate cream
In a bowl whisk egg, sugar and corn starch. In a saucepan bring milk to a gentle simmer, add a few tbsp of hot milk into the egg mixture and stir fast.
Next pour the egg mixture into the saucepan with the remaining milk, stirring fast. As soon as the cream starts to thicken (it will take less than 1 min), add in the chopped chocolate and stir well until it melts.
Pour the cream into you pie shell and bake in pre-heated oven at 180C for about 35min
Remove from the oven and let you pie cool down completely. Decorate then with fresh raspberries and sliced almonds.
