Today I share with you an alternative way to serve up focaccia. The dough is rolled instead of flat and staffed with cheese and ham.

For the dough, you will just need to follow the instructions in my Pizza with Biga. You can just have the dough triple in size at room temperature without having it ferment in the fridge for 12 hours. This will help you save up some time.

For the filling, you could add some sautéed mushrooms or spinach.

Ingredients:

for the dough

  • one batch of pizza with biga

for the filling

  • 140g ham
  • 250 g scamorza cheese
  • 50 g cream
  • 2 tbsp extra virgin olive oil

Follow the instructions in my post Pizza with Biga, then on a lightly floured surface roll out the dough into a rectangular shape

Lay sliced cheese, ham and cream on top

Gently roll it up sealing well the edges together.

Brush the top with 2 tbsp of extra virgin olive oil

Bake in pre-heated oven at 200C for about 30 min (place the tray at the lowest rack in of your oven)

Let it set for about 30 min the slice up and serve!
