Fluffy Bread Toast – Homemade

Super soft, tall and fluffy bread toast made with milk roux technique.

Today I am going to share with you a super recipe to make a fluffy bread toast. The whole process will require about 24h, but it is totally worth it.

You will get a fluffy, soft and delicious bread that you can use to make savoury and/or sweet toasts.

This recipe uses the technique of milk roux, which basically is a mix of milk and flour cooked at 80C, similar to making béchamel sauce but without the butter.

Ingredients:

for the milk roux

  • 300 ml milk
  • 30 g flour W330

for the dough

  • milk roux
  • 590 g bread flour w330
  • 165 g water
  • 8 g fresh yeast
  • 10 g salt
  • 20 ml extra virgin olive oil
  • 30 g butter, soften

For the milk roux, in a saucepan stir milk and flour and bring to 80C. Turn off the heat and let it cool down.
Next in a bowl of your electric mixer combine flour, water, fresh yeast and the milk roux.

Knead the dough with the hook attachment until it comes together. Add salt and keep kneading for a few minutes. Pour in oil and mix until it is completely absorbed. Last add the softened butter, a few pieces each time. Waiting for the first batch to be absorbed in the dough before adding more. Keep kneading until you get a smooth and soft dough.

Cover with plastic wrap, place bowl in a warm place and let it double in size, then move it in your fridge for 10 hours or overnight.
The following morning divide the dough into 3 parts (350-380 g each).

Cover with a clean linen towel and let rest for about 2 hours or until doubled in size.

Now roll out each ball into an oval shape

Then turn 90 degrees

and roll the dough into itself.

Place the 3 parts into a tall bread pan.

Cover with a clean linen towel and wait until it almost triples in size. Lightly brush with milk.

Bake in preheated oven at 170C for about 55 min. When ready gently remove the bread from the pan and let it cool down completely on a wire rack (if the top start to color too much, cover with foil and keep baking. The bread will need at least 50 min to be fully cooked)

Slice up and use it to make sweet or savoury toasts!
