Gut-Healing Spinach Soup | Vegan

Light & creamy spinach soup with fermented garlic and miso paste

After the extravagances of the weekend (somehow even in lockdown we manage to eat more!!! haha), this soup is what we need.

Made with some gut-friendly ingredients like fermented garlic (AKA black garlic), fresh ginger, miso paste and cumin seeds and topped with healthy fats from seed and extra virgin olive oil.

Spinach have also lots of health benefits: they are rich in fibers, are an excellent source of vitamin Kvitamin Avitamin C and folate as well as being a good source of manganesemagnesiumiron and vitamin B2Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach.

Ingredients:

  • 400 g fresh spinach
  • 1/2 head fermented garlic
  • 1/2 inch fresh ginger
  • cumin seeds and black pepper
  • 1 tbsp miso paste
  • 1/2 cup almond milk (or cashew milk or coconut milk)
  • salt

for topping

  • mix of seeds (pumpkin, sunflower, sesame)
  • 1 tbsp extra virgin olive oil

Place all ingredients in a large saucepan, add 1/2 cup of water and bring to a simmer.

Cook with lid on on low heat for about 15 min or until spinach are soft.

Add the coconut milk (or the type you are using), adjust with salt and blend into a cream

Pour the soup into serving bowl, top with mix of seeds and a drizzle of extra virgin olive oil .
