Lupin Bean Hummus with Sun-dried Tomatoes

Hummus made with lupin beans and sun-dried tomatoes perfect for those following a Keto or low-carb diet!

Those of you who have been reading this blog for a while, know very well that I have an addiction for hummus. In fact, here on the blog I have already shared several recipes for making hummus with chickpeas, white beans, red beans, mint, basil, avocado and many more!

This time I experimented using lupin beans!

Lupin beans are very healthy and, compared to other types of beans, are lower in carbs (only 7g per 100g), low in fat (only 2,4 g per 100g) and high in protein (16g per 100g), making this recipe also suitable for those on a Keto or low-carb diet!

Ingredients:

  • 200 g precooked lupin beans, skin removed
  • 1/2 lemon juice
  • 8 sun-dried tomatoes
  • 1 tsp capers
  • 1 tbsp extra virgin olive oil
  • water, as needed
  • 2 tbsp tahini sauce
  • salt, as needed
  • a dash of chili powder (optional)

Rinse the beans several times under running water, then let them soak in filtered water for about 12h, this will help eliminate all the salt.
Next place all the ingredients into a food processor

and pulse until you get a cream. Add just enough water as needed to reach your desired consistency. Adjust with salt, if needed.

Transfer your hummus into a serving bowl and enjoy with crackers or sticks of fresh veggies.
