Dairy-free super soft brioche bread shaped and decorated like a Christmas tree!

Here is one of my favorite Christmas recipe! A super soft brioche bread, staffed with olives and ham, shaped and decorated like a Christmas tree!
The recipe is lactose-free, but even though we are not going to use any butter, we will still get a super soft brioche dough.
The filling is absolutely up to you! You could use sun-dried tomatoes and capers, some salami, stir-fried veggies or even don’t use any staffing at all!
Ingredients:
- 350 gr type 0 flour
- 35 gr oil
- 5 gr fresh yeast (or 1/2 tsp dry active yeast)
- 95 ml oat milk
- 95 ml water
- 20 gr erythritol
- 6 gr salt
- zest of 1 small organic orange
- 1/2 tsp honey
for the filling:
- 70 gr di ham
- 70 gr di chopped black olives
For the top:
- 1 egg yolk
- oat milk
The day before in a bowl combine the zest of the orange and the honey. Cover with plastic wrap and let is marinate

First off we will prepare the starter with 50 gr of flour, 25 gr water and 25 gr of oat milk. Stir and let it rest at RT until it doubles in size.

The the starter add now the remaining flour, milk, water sugar and the orange infuse.

Once all the liquids have been absorbed and the dough is coming together add the oil and salt and mix until the dough is not sticking on the bowl and it is smooth and elastic. Turn in onto your kitchen counter and do a few rounds of slap and folds, 20 min from each others.

Cover the dough with plastic wrap and let it triple in size.

Once the dough is ready, divide it into 20g pieces, slightly roll out each piece and place some ham and olives in the centre. Close it well to form a ball.

Lay the balls on a baking tray lined with parchment paper, in the shape of a tree, making sure to leave a few mm between each ball.

Let the dough rest at RT until it doubles in size, next brush the top with a mix of egg yolk and milk, then bake in pre-heated oven at 180C for about 20-25 min or until it got a nice golden color. Lightly brush the top with some extra virgin olive oil and cook for a few more minutes.

Remove from the oven and let it cool down. Decorate it now with some cherry tomatoes, olives and rosemary
