Spiced Vegan Cookies | Gluten-free

Super simple recipe to make vegan spiced cookies which are delicious and scream Christmas!

This morning I woke up craving Xmas cookies, I wanted something very spiced, which could be made in a more holistic way.

That’s how I came up with this recipe, which uses all-natural ingredients, no gluten and no dairy. They are also vegan and DELICIOUS!


  • 80 g oat flour (gluten-free)
  • 15 g coconut oil, melted (or ghee, for non vegan option)
  • 50 g erythritol sugar (@ZUMUB, discount code: EXPATCUCINA)
  • a pinch of salt
  • 30 g water
  • 2 tbsp spices (ground cinnamon, ginger, nutmeg)

In a bowl with a spoon stir all the ingredients together, roll out dough and cut out your cookies in the shape you prefer. I used some mini cookie cutters.

Bake in pre-heated oven at 180C for 7 min.
