These cookies have been such a pleasant surprise. When I got the idea to make cookies using red beans I could not expect them to turn out SO damn delicious!
They are incredibly tasty, easy to make and 100% all natural.
Ingredients (12 cookies):
- 240 g cooked and drained red beans
- 130 g banana + 3 tbsp maple syrup (if you want them extra sweet – optional)
- 30 g almond flour
- 10 g coconut flour
- 20 g unsweetened cacao powder
- dash of cinnamon
- pinch of salt
In a food processor combine all the ingredients.

Blend until creamy

Divide into 12 balls, gently press them down with the back of a fork

Bake in pre-heated oven at 180C for 12-15 min. These store best in your fridge for 2-3 days
