Gluten-Free | Vegan | Naturally Sweetened Red Bean Cookies

These cookies have been such a pleasant surprise. When I got the idea to make cookies using red beans I could not expect them to turn out SO damn delicious!

They are incredibly tasty, easy to make and 100% all natural.

Ingredients (12 cookies):

  • 240 g cooked and drained red beans
  • 130 g banana + 3 tbsp maple syrup (if you want them extra sweet – optional)
  • 30 g almond flour
  • 10 g coconut flour
  • 20 g unsweetened cacao powder
  • dash of cinnamon
  • pinch of salt

In a food processor combine all the ingredients.

Blend until creamy

Divide into 12 balls, gently press them down with the back of a fork

Bake in pre-heated oven at 180C for 12-15 min. These store best in your fridge for 2-3 days
