Unbelievably tasty and fresh this hummus made with red beans. The addition of fresh mint and ground ginger add that extra flavour that makes it super special!

If you like dips, hummus and all those kinds of things then you are going to go bonkers over this red bean and mint hummus.
Used precooked beans for a quicker recipe, or boil your own to avoid preservatives and extra salt.
- 250 g cooked and drained red beans (one can)
- 2 tbsp extra virgin olive oil
- fresh mint leaves
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/4 tsp ground chili
- 2 tbsp tahini
- juice of 1/2 lemon
- 1/4 tsp ground ginger
- water, as needed
In a blender place all ingredients minus the oil
While blending pour in 1 tbsp of oil and enough water to get the right consistency.
Pour it into a serving bow, drizzle the top with the remaining tbsp of oil and enjoy with my Keto Crackers or my Low-Carb Crackers or my Buckwheat and Crackers or my Yeast-free Crackers, you have got plenty of options 😉
