Gluten-free, dairy-free, super soft and flavourful, Keto friendly pancakes for a super nutritious breakfast!

#bodylovereset is the lifestyle I have been following! I am giving my body the time to reset and rebalance but taking a break from all processed foods, refine flours, sugar, gluten, lactose.
I am basically following a diet based on unprocessed whole foods, which are as natural as possible. I am not eating dairy nor gluten as well, to reduce inflammation.
My diet is pretty simple, yet very filling, nutritious and satisfying. Lot’s of veggies, beans, no-gluten grains, nuts and seeds, wild fish and grass-fed meats.
These pancakes are what I made for myself for breakfast just today. Super filling, all 100% all natural! Made with just almond flour, veggie mylk, coconut sugar and one egg (which you can replace with flax egg for vegan option) they will fuel you for a long time!
Ingredients (makes 5 pancakes):
- 100 g almond flour
- 1 egg (or 1 flax egg for vegan option)
- 1 tsp tartar
- 1/4 tsp vanilla
- 110 g soy milk or almond milk or water
- 10 g coconut sugar
- 3 g xantam gum
- dash of ground cinnamon
Whisk together the egg (or flax egg), milk or water, vanilla and tartar
Add in the flour and ground cinnamon and stir until a creamy batter forms
Cook your pancakes on a hot, greased pan for a few minutes on each side and serve with fresh or cooked fruit and maple syrup.
I just cooked up in a saucepan with a drop of water and some ground cinnamon, a handful of grape.
