Ayurvedic Kitchari

Vegan and Ayurvedic recipe made with yellow split mung beans and basmati rice stewed together with a mix of spices.

Considered to be a very healing and detoxifying dish, Kitchari is a stew made of rice, mung bans and digestive spices.

Very simple to make and ready in a little over 1 hour, it is really a cosy and tasty meal, packed with nutritious ingredient. Vegan and gluten-free it provides healthy carbs, protein and fat.

Ingredients (serves 2):

  • 100 g split mung beans
  • 100 g basmati rice
  • 4-1/2 cup of water
  • 1 tsp salt
  • 1/4 tsp turmeric
  • 1/4 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 1 tbsp ghee
  • 2 cm fresh ginger
  • ground black pepper

First thing first soak rice and beans in filtered water for 30 min. Then rinse until water runs clear.

In a saucepan melt the ghee, add the spices and toast them on low heat until fragrant (a couple of minutes).

Add in beans, rice, water and salt, cover with a lid and let simmer for about 30 min. If too thick, add more water for a thinner texture.

Serve it up and enjoy!
