Let’s start with this healthy, gluten-free, sugar-free, low-carb, low-fat and high-protein pudding. Make it the night before and you will have breakfast ready!
All you need a a few simple ingredients, a blender and a saucepan!
Ingredients (makes 1 large or 2 small):
- 130 g egg white (replace with 130 ml of mylk for vegan option)
- 100 ml milk (vegetable mylk for vegan option)
- 1 g of agar agar (2.5g if making vegan version)
- 20 g erythritol sugar
- 10 g unsweetened cacao powder
- 100 g cooked pumpkin
- dash of cinnamon
In a saucepan bring milk (or mylk), egg white (more mylk for vegan option) agar agar, cinnamon and erythritol sugar to a boil
Add in the cooked pumpkin and cacao powder
Blend everything until smooth
Cover a bowl with plastic wrap, pour in the mixture and refrigerate for min 3 hours or better overnight. Following morning, flip it onto a plate, dust the top with more cacao powder (optional) and enjoy!
