Super soft cake with yogurt and fresh peaches, easy to make it is perfect to dip into a hot cup of coffee in the morning!

Here is a super simple recipe to bake up a soft and flavourful cake. The yogurt in the batter helps make the cake extra soft, the chopped fruit makes it sweet and juicy.
- 200 g cake flour
- 200 g greek yogurt
- 120 g granulated sugar
- 2 whole eggs
- 60 ml vegetable oil
- zest of 1 lemon
- 10 g baking powder
- a pinch of salt
- 2 peaches
In a bowl whisk eggs and sugar until light in color and foamy. Add in oil and yogurt. Last sift in all the dry ingredients folding them gently.
Grease and dust with flour a 22 cm cake pan. Add on top the chopped peaches
Bake in pre-heated oven at 180C for about 40 min
