Super Creamy Keto Zucchini Ice Cream

Craving ice cream but following a low-carb or Keto diet? Well, read up!

You won’t believe me when I’ll tell you that this ice cream is made with zucchini! Yes, you heard me right. No bananas, no cream, no full-fat milk, no coconut oil, no frozen fruits….

The consistency is SO CREAMY, just like real gelato, and you won’t be able to taste an ounce of the zucchini!

Ingredients:

  • 80 g all natural peanut butter (@zumub, 10% discount code: EXPATCUCINA)
  • 200 g frozen zucchini, sliced
  • 15 g unsweetened cacao powder
  • 15 g erythritol sugar (@zumub, 10% discount code: EXPATCUCINA)
  • 3 g xantham gum

Place all ingredients in a blender and start processing

until you get a creamy and smooth texture. Do not add any milk or water, scrape down the sides of your blender in precess and let it go until done.

Scoop it out and serve it up!

You can store this zucchini ice cream in your freezer for 1 week, just take it out 15 min before serving to allow it to smoothen up.
