I can’t eat bananas, as I fruit I mean…If I eat a whole fresh banana (ripe or not) I have a HARD time digesting it.
Only way for me to be able to eat them is to use them in baking or cooking, like in nice cream recipes, or muffins, cakes and bread.

Today’s recipe is vegan and got the addition of coconut, which gives this bread that extra extra flavour and sweetness. It is SUPER simple as all you need is a blender and 10 min of your time. The rest is done in the oven!
- 140 g type 2 flour
- 140 g dry coconut
- 50 g coconut oil, melted (@zumub, discount code: EXPATCUCINA)
- 10 g baking powder
- a pinch of salt
- 3 ripe bananas
- 1/4 cup dark vegan chocolate chips
- 100 g coconut sugar
- 250 ml almond milk
In a blender combine 2 bananas, melted oil and milk. Process until smooth. next add the flour, dry coconut, pinch of salt and baking powder. Pulse it until combined. Fold in the chocolate chips (save a few).
Pour the batter into a bread loaf pan lined with parchment paper. Cut in half the 3rd banana and lay it on top. Drop a few more chocolate chips and bake in pre-heated oven at 180C for 40 to 45 min.
Remove from the oven and let the bread cool down completely before slicing it.
