Cherry Chocolate Cake | Dairy-free

Here is a super soft and flavourful dairy-free cake made with fresh cherries and dark chocolate.

This cake is going to make you fall in love! I mean, how yummy is the combo chocolate + cherries? I go totally nut over it.

This cake is SO SOFT and flavourful, it doesn’t need to be dipped in anything, as it will literally melt in your mouth.

  • 2 whole eggs
  • 200 g cake flour (type 00) OR spelt flour + more to dust the pan
  • 120 g light brown sugar or coconut sugar
  • 10 g baking powder
  • a pinch of salt
  • 200 g fresh pitted cherries
  • 50 g dark chocolate chips
  • 30 g unsweetened cacao powder
  • 100 g vegetable oil
  • 100 g almond milk or soy milk

In a bowl whisk up eggs and sugar until foamy and light

Add the oil then incorporate the cacao powder, baking powder, salt with half of the flour and milk. Whisk in gently the ingredients then add the remaining half of flour and milk. You should get a creamy batter.

Stir in 2/3 of the pitted cherries

Oil and dust with flour an 18 cm cake pan, pour in the batter and decorate the top with the remaining cherries and all of the dark chocolate chips.

Bake in pre-heated oven at 180C for about 40 to 45 min

Let the cake cool down completely before serving it.
