Vegan Lemon and Chia Seeds Ring Cake

Fragrant vegan cake, naturally sweetened and high in fibres!

Here it comes today a soft and yummy vegan cake made, as always, with very simple ingredients.

If you are not vegan, but still want to make it, feel free to replace the flax egg with one hen egg and coconut oil with melted butter.


  • 1 flax egg (1 tbsp ground flaxseeds + 3 tbsp water)
  • 80 g apple sauce
  • 100 g coconut sugar
  • 50 g coconut oil, melted
  • 160 g cake flour
  • 60 g whole grain flour
  • 20 g coconut flour
  • 1 tbsp chia seeds
  • 60 g soy milk
  • juice of 1 lemon
  • zest of 2 lemons
  • 120 ml water
  • 1 tsp baking powder
  • a pinch of salt

In a bowl make the combine flaxseeds and water, stir and let sit for a few minutes until it thickens

In a separate bowl stir together apple sauce and chia seeds

Grate the zest of 2 lemons, In a bowl of your electric mixer whisk all the wet ingredients together (chia mix, flax egg, lemon juice, milk, water and melted coconut oil)

add the dry ingredients and stir to combine

Pour into greased baking pan and bake in pre-heated oven at 180C for 50 min. Once cooked, let the cake cool completely on a wire rack.

Then dust them with powdered sugar and some lemon zest.

Dip this cake into some tea…and you will become addicted!

Store it under a glass bowl for a few days.
