Gluten-free | Low-carb | Protein Cookies

Sweet, soft, chewy cookies made with no flour, no dairy. High in protein and low in sugar they are perfect if you need something sweet but light.

These are so far the best FIT COOKIES I have made. Gluten-free and sugar-free, these cookies use soy flour instead of wheat flour, no dairy but a bit of cashew butter and I have replaced granulated sugar with ZUMUB calorie-free Erythrit.

Super simple to make, I leave you with 2 flavours: one with dark chocolate chips and one with cranberries and white chocolate!

Ingredients:

  • 120 g cashew butter (1/2 cup), room temperature
  • 60 g Erythrit sugar (1/4 c) (@zumub – 10% DISCOUNT CODE: EXPATCUCINA)
  • 1 whole organic egg
  • 1 egg white
  • zest of 1 orange
  • 1 tsp vanilla extract
  • 40 g soy flour (1/2 cup)
  • 30 g ISOPURE vanilla protein powder (1 scoop)
  • a pinch of salt
  • 1/2 tsp baking powder

for the chocolate chips

  • 3 tbsp dark chocolate chips

for the cranberries white chocolate

  • 2 tbsp white chocolate chips
  • 2 tbsp dry cranberries

In a bowl whisk together softened cashew butter, egg white and Erythrit sugar.

Add in the zest of 1 orange.

Next sift in the soy flour, baking powder and protein powder.

Now add the dark chocolate chip or the white chocolate chips and chopped cranberries.

The batter should be quite soft and sticky. Drop tbsp on parchment paper and bake in pre-heated oven at 180C for about 20 minutes.

Let the cookies cool down completely then store in an airtight container.
