Low-Carb Protein Parfait |Dairy-free & Sugar-free

Hello friend, before getting “busy” with my weekend plans (now that we can finally go out and enjoy a bit of a social life after the strict restrictions of COVID19) – beach, sun, friends and family, let me share with you this super simple recipe which I have been making over and over in the past weeks!

Let me tell you this is my new obsession! Totally dairy and sugar free and very low in fat, it is perfect if your are on a diet or watching your weight.

Just a few steps and you will get creamy chocolate and lemon custard layers with crunchy homemade granola!


for the chocolate custard

  • 50 g egg white
  • 5 g unsweetened cacao powder
  • 10 g chocolate oat flour (@ZUMUB, 10% discount code: EXPATCUCINA)
  • 120 ml unsweetened almond milk
  • 1 g vanilla bolero

for the lemon custard

  • 50 g egg white
  • 1 g lemon pie bolero
  • 10 g vanilla oat flour (@ZUMUB, 10% discount code: EXPATCUCINA)
  • 100 ml unsweetened almond milk

for the granola

  • 50 g oats (@ZUMUB, 10% discount code: EXPATCUCINA)
  • 30 g almond butter (@ZUMUB, 10% discount code: EXPATCUCINA)
  • 1 tbsp coconut ghee, melted (@ghee easy)
  • dash of ground cinnamon

For the chocolate custard, in a sauce pan place oat flour, cacao powder and bolero. Add in the egg white and whisk until smooth.

Pour in the milk and bring to a gentle boil, on low heat stirring constantly with a spatula. Once it thickens remove from heat and transfer into a bowl. Cover with plastic wrap, let it tough the custard to avoid the creation of a thick layer while cooling.

Next, prepare the lemon custard. In a saucepan stir oat flour, bolero and egg white. Add in milk

Bring to a gentle boil, stirring constantly with a spatula until it thickens.

Transfer to a bowl, cover with plastic wrap and let cool down. Transfer both bowls into your fridge for a couple of hours.

While the custards are chilling, prepare the granola. This recipe is super simple and hassle free. In a bowl just stir together rolled oats, almond butter, cinnamon and melted ghee.

Spread it on a baking tray and bake in pre-heated oven at 180C for about 20 min or until crunchy. Remove from the oven and let it cool down completely.

Next, to assemble your parfait, just lay some granola at the bottom of your container, cover it with a layer of chocolate custard, then place more granola, next is lemon custard. Decorate the top with some more granola or a dust of cinnamon if you like!
