Pear and Lemon Cake | Dairy-free

Super soft and flavourful cake made with ghee, fresh pears and my homemade lemon jam!

A few weeks ago I got a few jars of Ghee from Ghee Easy. They sell several types of ghee and they are ALL amazing. So far my favorite one is the rosemary flavour.

Ghee is perfect to use for those with lactose intolerance or on a paleo diet, as it is clarified butter where all the lactose has been removed, making it dairy-free.

I have used it to make this cake…shall we talk about this cake? …Shall we?

SUPER-soft, not overly sweet and with extra texture given by some fresh chopped pears, this cake will become addictive! What makes it even better is that is so easy to put together. If you don’t like pears or lemon jam, or just don’t have those ingredients at home, feel free to replace with other types of fruits and jams.

Ingredients:

  • 2 eggs, at room temperature
  • 80 g sugar
  • 150 g cake flour
  • 50 g type 2 flour
  • 10 g baking powder
  • a pinch of salt
  • 200 g fresh pears, peeled and cubed
  • 150 g lemon jam
  • 100 g water
  • 50 ml ghee, melted (or vegetable oil)
  • ghee + more flour for the cake pan
  • 50 g lemon jam + water, for the top

In a bowl of your electric mixer whisk up eggs and sugar until light and fluffy.

Add in the jam, melted ghee and water, slowly whisk those in. Next add in the flours, salt and baking powder, gently folding them into the batter with a spatula.

Last fold in the cubed pears.

Grease and dust with flour a cake pan of 25cm diameter (I used a ring cake form). Bake in pre-heated oven at 180 for 40 min or until a tooth stick inserted in the centre comes out clean.

Let the cake cool down completely, then gentle remove it from the pan and place it in a plate.

Warm up the lemon jam with a few tbsp of water, and brush it on top of the cake

Slice it up and enjoy!
