Hello people! Apologies for the absence, I know it felt like I fell off the face of the earth, which I practically did, at least on line.
I just needed a little break from social media, posting, sharing, commenting. Weird, cause I generally LOVE that, but recently I have found myself “drained”.
Partially due to work, which is particularly hectic. Working remotely from home for over 6 months now, with the whole team in Shanghai, certainly is not making things any easier. But this is the world we live now, and until COVID19 is under control and people will be free to move across countries, this is what I will have to get used to.
So I decided to take a little break, which helped me recharge and get some energy back to experiment, cook, and share my recipes with you! Though I will still take it easy for a few more weeks, or until I will feel completely back to “my normal self”, I will try to post at least a couple of new recipes a week!
So let’s start from this strawberry galette. There are many recipes online to make this easy French dessert, some with pistachios in the dough, some with almond flour. The beauty of cooking, I call it.
The recipe I share with you today is the one I found on this lovely italian blogPer amore- Cibo in viaggio, her food is really amazing, so if you can read Italian, I highly recommend checking it out. Sara, the blog’s owner, is such a sweet girl, and if you write to her on IG, she will quickly reply to you with lots of suggestions and advices!
for the dough
- 150 g spelt flour
- 100 g whole wheat flour
- 100 g butter, cold
- 30 g cane sugar
- 70 g water
- 1 pinch of salt
for the fillin
- 300 g fresh strawberries
- 250-300 g strawberry jam
- the juice of half a lemon
- 1 cane sugar
- 1 egg + a tbsp milk
- fresh thyme leaves
- granulated sugar to sprinkle
In a bowl of your electric mixer place all the ingredients to make the dough.
With the paddle attachment, mix until you get a smooth and soft mixture. Wrap it in plastic wrap and place in your fridge for at least 4 hours, or overnight.
The following day, wash and slice your strawberries, mix them with the juice of half lemon, 1 tbsp of cane sugar and some thyme leaves. Set aside.
Roll out the dough into a circle, not too thin as this won’t grow when cooking.
Spread the jam in the centre, leaving about 1 inch from the edge. Cover with the strawberries. Save the marinated juices for later.
Fold in the edges, Brush them with a mix of egg and a splash of milk then sprinkle with some granulated sugar.
Bake in pre-heated oven at 180C for 40 min. Start on the lower rack and move it up to middle-high for the last 10 min.
Let the galette cool down and serve it up lukewarm or at room temperature. Ideally, with a dollop of vanilla ice cream…who is counting calories at this point, right?
Oh! when cooled, brush the strawberries with the marination juice we saves earlier!
