A light and delicious meal low in carbs with Zero&Light Pasta!

For those days when you need something a little lighter and lower in carbs, but still want to enjoy a nice meal, Zero&Light pasta line is what you need!
Their products are low-carb, low-fat, high in protein and fibres and gluten-free.
In this recipe I have used their Fit Line (high in protein) and a creamy dressing made of fresh ricotta, natural pistachio nuts and fresh asparagus.
Ingredients (serves 1):
- 35 g Zero&Light Fit Pasta
- 1 tbsp extra virgin olive oil
- 150 g fresh asparagus
- salt and pepper
- 50 g fresh ricotta cheese
- 1 tbsp all-natural pistachio nuts
- 1 tsp grated parmesan cheese
Boil pasta following package instructions. Meanwhile bleach the asparagus for 3 min in boiling water, then cut off the tips (set those aside) and blend the rest with the ricotta, pistachio nuts, extra virgin olive oil, salt pepper and 1 tbsp of water (taken from the pot where you are cooking the pasta).
When pasta is ready, drain it and dress it with the pesto. Add the tips of asparagus, a grate of Parmesan cheese and some fresh parsley leaves.
Serve it up immediately.
