Crunchy homemade crackers made with sourdough and whole red rice flour!

Red rice flour is my new thing, I just LOVE IT! It makes things so crunchy and add that extra whole flavour to your baking goods.
After making bread with it, I have decided to experiment and incorporate it to make crackers. Just a few weeks ago my auntie had shared with me a recipe to make crackers at home using sourdough starter.
I liked the idea of putting in good use some of my SD, but having just plain white crackers wasn’t doing it for me, that’s where I changed things a bit and created this recipe!
- 170 g sourdough starter
- 100 g red rice flour
- 25 g water
- 20 g extra virgin olive oil
- 5 g salt
- 50 g whole wheat flour
Take your sourdough starter out of the fridge 2-4 hours before starting (it needs to get bubbling which will take longer during winter time, and will be much faster over summer time). In a bowl combine all the ingredients
Stir them all together
then cover with plastic wrap and let rest for 1h. The dough now should look much more relaxed and elastic.
Roll it out onto a floured surface
then cut off your crackers the shape you like! Prick the crackers with a fork.
Bake in preheated oven at 200 c for about 20 to 40 min or until your crackers are nice and crispy. Remove and let them cool down completely before storing them.
Snack on them or dip them into hummus or guacamole!
