Cauliflower Margherita Pizza

The perfect low-carb crispy cauliflower pizza dressed with simple tomato and mozzarella!

Saturday is for PIZZA!

But considering that the buttons of my pants have started to social distance themselves, and considering also that I have been eating WAY too many pizzas recently, I have decided to go for a low-carb cauliflower crust topped with the classic margherita dressing: tomato sauce and mozzarella!

If you follow this recipe, trust me, you will get a crispy crust and you won’t even taste the cauliflower.

The secret?….a few. Let me show you πŸ˜‰

Ingredients (1 large pizza):

  • 1 medium cauliflower head (about 6 cups of florets)
  • 50 g egg white (or 1 whole egg)
  • 2 tbsp grated parmesan cheese
  • salt and ground pepper
  • dry oregano
  • 1/4 cup (30 g) almond flour
  • 1/3 cup tomato sauce
  • 40 g mozzarella cheese
  • Fresh basil
  • Extra virgin olive oil

Wash the cauliflower, cut off the florets and pulse them into a food processor until it finely minced (looks like tiny rice pieces) then place it all in a large microwave safe bowl, place a microwave safe plate on top and pop it in the microwave for 15 minutes making sure to stir it half way through. Let it cool down completely then transfer it all into cheesecloth and squeeze out all the excess water. Make sure to really squeeze everything out, this will give you a nice and crispy crust!

Place the solid in a large bowl, add the egg white, grated parmesan cheese, almond flour, salt, pepper and dry oregano. Stir all the ingredients together.

Spread the mixture into a 12×12” circle on a large piece of parchment paper.

Bake it in pre-heated oven at 200C for 15 min or until nice and golden brown in color.

Take it out and dress it with tomato sauce, mozzarella and a few leaves of fresh basil.

Don’t use fresh mozzarella, or it will get too watery resulting into a soggy crust.


Bake it again for 5-8 min or until cheese is melted.

Drizzle the top with a little extra virgin olive oil and serve!
