Vegan Carrot and Orange Cake

Light and soft vegan cake to boost your immune system with lots of vitamins.

because week 6 of social distancing is getting to an end, but we still have 3 more to go

because my jeans don’t fit me anymore

it’s time to share this SUPER yummy and soft cake which is vegan and super easy to make. The combination of oranges, carrots and lemons will bring so much flavour, making this cake so fragrant. I am sure you are going to love it!

Ingredients:

  • 150 g fresh carrots (cleaned)
  • 350 g cake flour
  • 130 coconut sugar or Erythritol (@zumub – 10% discount code: EXPATCUCINA)
  • 200 ml water
  • 150 ml orange juice + 1/2 lemon
  • zest of 2 oranges and 1 lemon
  • 80 ml vegetable oil
  • 10 g baking powder
  • a pinch salt

In a bowl whisk together sugar, orange and lemon juice and water until sugar dissolves. In a separate bowl soft flour, baking powder and salt.

Add the dry ingredients into the wet one slowly, stirring them in with a wooden spoon

In a food processor pulse carrots and oil until a paste forms. Add that into the mixture and stir it in.

Oil and flour a ring cake pan, pour in the cake batter and bake in pre-heated oven at 170C for 40-50 min. Check the cake with a tooth stick to make sure it cook throw.

Let the cake cool down completely, then remove it from the pan

and dust it with some powdered sugar

This stores well for several days under a glass bowl.
