Dinner is ready in 15-min with this simple vegan stir-fried noodles recipe.
Missing China and considering I have no idea when I will be able to head back to Shanghai with all the COVID19 emergency, and also craving some Asian food, I have decided to make myself this yummy stir-fried noodles.
The recipe is super simple and takes less than 15 min to make.
Also vegan-friendly as we don’t use any animal sourced ingredients.
Ingredients (serves 1):
- 125 g firm tofu
- 2 tbsp soy sauce
- 100 g rice fettuccine noodles
- 1 tbsp peanut oil
- dry chilli
- 250 g fresh asparagus
First off, dice up the tofu and path it dry
Wash and cut the asparagus and boil them for 5 min until slightly tender. Drain and set aside
In a skillet heat up oil, add tofu, dry chilli and stir-fry until golden brown in colour. Add in 1 tbsp of soy sauce and stir it. Meanwhile boil the noodles
Add in the asparagus and cooked noodles, one more tbsp of soy sauce and some extra chilli powder if you like it spicy.
Serve and enjoy!
