Buckwheat Pie | Gluten-free & Dairy-free

Flaky and sweet gluten-free and dairy-free pie, ready in less than 1 hour!

Craving something sweet but you want it PRONTO? This pie recipe is what you need!

Made with no dairy, the pastry dough does not need to be refrigerated before going into the oven. Using buckwheat flour makes it also gluten-free, for those of you with intolerance.

  • 330 g buckwheat flour
  • 100 g light brown sugar or coconut sugar
  • 2 whole organic eggs
  • 80 ml vegetable oil
  • 200 g jam

In a bowl whisk eggs and sugar until they turn foamy and light in colour.

While whisking slowly pour in the oil. Stir in the flour

first using a wooden then with your hands until you get a smooth dough

Remove 1/3 of the dough, then roll out the rest into a half cm disk, and use it to cover a 22cm pie pan.

Fill the pastry shell with the jam.  With the extra 1/3 dough make strips to create a lattice finish.

Bake in pre-heated oven at 180 C for 30-40 min

Remove and let it cool down completely, the dust it up with some powdered sugar!
