Oat flour and Erythritol make these cookies low in sugar and carb!

Ingredients (makes 10):
- 100 g whole oat flour
- 25 g vanilla flour (@zumub, discount code: EXPATCUCINA)
- 60 g egg white
- 30 g no-fat Greek yogurt
- a pinch of salt
- 1/2 tsp baking powder
- 35 g Erythritol sugar (@zumub, discount code: EXPATCUCINA)
In a bowl whisk together egg white and yogurt.
Add in Erythritol sugar (which is basically calorie-free)
Fold in sifted flours, baking powder and a pinch of salt. You should get a smooth and soft batter which does not stick to your hands.
Dust with some flour a sheet a parchment paper. Dust the top of the dough and your rolling pin with some more flour and roll it out into a rectangular which is about 7mm thick.
Then cut it up into 10 rectangular shape cookies
Roll each cookie into more Erythritol sugar then refrigerate them for 20 to 30 min.
Next, bake the cookies into pre-heated oven at 180 C for 12 minutes.
