Fluffy and soft buttermilk pancakes!

Good morning peeps! How was your weekend? I got to do another cooking class in live streaming facebook and it was so much fun! I really enjoy it and it helps me miss a little less teaching in Shanghai
In yesterday class we learnt how to make pancakes!
I mean who does not love a nice, fluffy, covered in maple syrup tower of pancakes? ❤️😋
Making pancakes is easy and you just need to pay attention to a few tricks!
Ingredients are simple so I am sure you have everything you need at home (#istayhome and don’t go out everyday to buy groceries!)
Here is my recipe!
Makes 4 pancakes:
- 100 g all purpose flour (or type 00)
- 15 g sugar
- 15 g butter, melted
- 1 egg
- 120 ml milk
- 6 g baking powder
- a pinch of salt
- 1 tsp white vinegar
Pour vinegar into milk and set aside. Separate egg yolk from egg white. Whip up the egg white very firm and set aside. In a separate bowl whisk egg, buttermilk and sugar. Add in the melted butter and a pinch of salt. Add sifted flour and baking powder. Gently fold in egg white, folding them from top to bottom.
Use some kitchen paper to grease with oil a non-stick pan, bring it to medium heat and when hot pour in 1 ladle of batter.

As bubbles starts to form on top, flip over your pancake and cook for 1-2 min on the other side. Make sure to use low to medium fire to avoid your pancakes to burn. Repeat until you use all the batter. You should get 4 pancakes.

Stack them up, dress them with maple syrup and fresh fruit and serve them up!
