Gluten-Free Vegan Banana Bread

Soft and flavourful gluten-free banana bread made with no eggs nor dairy!

Hello from quarantine day 6!
Yes it has been a whole week since Italy has been shut down and everyone has been asked to stay home to try control spreading of Corona Virus.

How I am keeping myself busy you might be wondering? Well, easy guess for most of you…I COOK! Yes, day after day I have been experimenting with new recipes, baking bread, pizzas and cakes!

I’ll most likely get out obese from this quarantine.

Today I want to share with you this easy recipe for making a naturally sweeten, vegan and gluten-free banana bread.

Let’s get started!


  • 250 g ripe bananas
  • 54 g vegetable oil
  • 2 tbsp maple syrup
  • 180 g oat flour
  • 70 g almond flour
  • 7 g ground flaxseeds + 45 g water
  • 6 g baking powder
  • 1/2 tsp vanilla extract
  • a pinch of salt
  • 20 g cacao powder + 30 g water

First thing first, mash up bananas with a pinch of salt

Mix flaxseeds and water and let stand for 10 min, then add that to the mashed bananas together with the oil and maple syrup. Whisk everything together

Add all dry ingredients

and mix until just combined.

Mix cacao powder with 30 g of water, bring to a gentle boil and whisk until the cacao is well melted.

Measure up 150 g of the banana batter, place it into a separate bowl and mix it with the cacao and water mixture.

Lay a baking pan with parchment paper and pour in about 3 tbsp of plain batter into your baking pan followed by 1 tbsp of chocolate, repeat until all butter is used. Then dip the back of a fork and move it around to swivel the 2 batters together.

Bake in pre-heated oven at 180C for about 50 min. Remove it and let it cool down on a wire rack

Slice it up and serve it with a nice cup of tea, hot chocolate or coffee!

No sugar added, gluten-free and vegan this banana bread is fan to make and will keep you busy for a few hours 🙂
