Gluten-free, 3-ingredient, all natural chewy cookies, super simple to make.
For those of you who have been reading this blog for a while, you know very well about my love for peanut butter and chocolate.
Many are the desserts and pastries I have made and shared with you using these 2 ingredients. What I am bring your way today is a SUPER SIMPLE, FLOURLESS cookies recipe, which takes no time to make and it’s super yummy.
All you need are 3 basic ingredients and some chocolate for the topping, which is also optional cause these cookies are equally yummy even plain.
- 250 g smooth all natural peanut butter (no sugar added)
- 1 whole egg or 60 g egg white
- 3 tbsp Erithritol sugar
- 50 g milk chocolate with crushed peanuts (or standard milk chocolate)
For this recipe I have used ZUMUB erythritol sugar and smooth peanut butter. I like Zumub PB cause it’s made 100% from peanuts, no sugar, no oil nor salt is added! If you want to try ZUMUB product you can get 10% off your bill using my code: EXPATCUCINA.
In a bowl place peanut butter, sugar and a whole egg, mix with a fork until all ingredients are combined
Using your hands divide the mixture into balls, pay them on parchment paper. Using a wet fork, press down the cookies to flatten them out
Then bake them in pre-heated oven at 180 C for 8-10 min for chewy cookies or to 10-12 min for more crunchy cookies. Remove from the oven and allow cookies to cool down completely before moving them onto a wire rack. Having this cookies no flour, if you try to lift them up before they are completely cooled, they will crumble into your hands, but this won’t happen once they are completely set.
In a clean bowl place chopped chocolate
microwave it until melted, then spread it on top of half each cookie. Allow chocolate to harden up
You could use any nut butter you like like almond or cashew or also my sugar-free protein nutella!
Store them in a air-tight container and grab one (or two) as you need.
