Spice up some fresh fennel with all the mediterranean flavours!
Here is a super simple, yet very tasty recipe to serve up fennel bulbs. Adding up some of the basic mediterranean ingredients will add flavour to this healthy dish!
- 2 fennel bulbs
- 50 g grated parmesan cheese
- 40 g kalamata olives
- 2 tbsp breadcrumbs
- 1 tbsp small capers
- 8-10 tomatoes on the vine
- 3 tbsp extra virgin olive oil
- salt and pepper
- 1 tbsp dry oregano
Wash and cut the tomatoes in half. Season with salt and pepper, 1/2 tbsp dry oregano and 1 tbsp extra virgin olive oil.
Bake at 180C for 20-25 min
Wash and slice the fennel bulbs into slices which at not too thick (about 1 cm).
Mix the sliced fennel with 1.5 tbsp of extra virgin olive oil, capers, olives salt and pepper
Add the tomatoes and sprinkle the top with the cheese and breadcrumbs. Drizzle the top with the remaining olive oil and dry oregano
Bake in pre-heated oven at 180C for about 30 min
Serve them warm!
