Overnight Yogurt Peanut Butter Chia Pudding

Quick and easy breakfast fix, high in fiber, protein and super filling!

Post-holiday detox is on and rolling! Who, and I mean WHO, has not over-indulged in cookies, turkey, staffing, pasta, and all that comes with Christmas and New Year celebration??? But now it’s THAT time of the year, the time for good resolutions, for fresh-starts, for getting fit and back on a healthy diet. Time to hit the gym and fit back into those “jeans”.

Well, I hear you and I am 100% with you on what I like to call my “come back project”!

So what’s best than starting our day off the right foot, with a healthy and filling breakfast? Overnight chia pudding are such a life saver for those busy mornings, this one got an extra kick from using yogurt (instead of milk) and from adding some natural peanut butter. It will definitely keep you full until lunch time.

Ingredients (makes 1 large serving or 2 small):

  • 1/2 cup Greek yogurt (or non-dairy yogurt of your choice)
  • 1/4 cup whole fat milk (or non-dairy milk of your choice)
  • 4 tsp chia seeds
  • 1 tbsp all-natural smooth peanut butter (@ZUMUB)

Place all the ingredients together into a large bowl and whisk until they are well combined. If it’s cold, it might take some time for the peanut butter to stir into the milk and yogurt.

Cover the bowl with plastic wrap and refrigerate over night

The following morning, serve it up with your preferred topping: fresh fruit, mixed seeds or just simple edible flowers!
