Fit Pan di Stelle Cookie Pie

Fit version of the famous Pan di Stelle Cookie Cream, low in sugar and carb but equally delicious!

You have seen them and most likely you have also ate them! I am talking about the new Pan di Stelle Cookie Cream which just recently have been put on the market!

These cookies are ADDICTING! They really are and once you start eating them you won’t be able to stop!

If you don’t know them, they are made of 3 layers: one cookie, one creamy chocolate filling and a last one of dark chocolate

Now, because I like them SO much, but I also like my jeans and I still want to fit in them, I have come up with a FIT recipe which is low in carb and fat but equally yummy!

For the crust I used a mix of chocolate oat flour (by ZUMUB.COM) and rice flour, instead of using butter I used greek yogurt. No sugar but honey instead.

For the filling I used my fit and high-protein hazelnut chocolate spread (recipe here).

The top is made with dark chocolate melted in a little bit of coconut oil!

Ingredients:

  • 130 g chocolate oat flour (by ZUMUB)
  • 30 g rice flour
  • 20 g dark cacao powder
  • 1 whole organic egg
  • 100 g greek yogurt
  • 15 g organic honey
  • 2 g baking powder
  • 2 g xanthan gum
  • 1/2 cup healthy nutella
  • 170 g dark chocolate
  • 2 coconut oil (by gre3n)
  • a pinch of salt

In a large bowl whisk together egg, yogurt and honey

Add xanthan, baking powder, flours, cacao powder and a pinch of salt

Mix until you get a smooth and soft (but not sticky) dough.

Roll it out into a circle and lay it in a 6 inch baking pan. Cut off any excess of dough, you need borders of 1,5 cm height. 

Cover the bottom with some dry beans and bake in pre-heated oven at 180 C for about 20 min.

Remove from the oven and let the pie cool down completely. Then remove the beans and let it rest on a wire rack

In the meantime in a bowl melt chocolate with coconut oil.

Pour it in a 6 inch pan which you have previously covered with parchment paper. Refrigerate until it hardens up.

Spread the chocolate cream in the pie crust.

Next place the chocolate disk on top!

You could make the white star by melting some white chocolate and pouring it in a star shaped cookie cutter. But, because I am lazy, I just used one of the really (not fit) Pan di Stelle cookies chocolate top to decorate….and I ate the rest of it….
