Keto-friendly and low-carb, this pasta dish makes a light and nutritious meal.
Hello peeps! So a quick update on my side. I was supposed to fly out to Shanghai next week, however due to the epidemic spreading in China I have decided to stay in Italy and wait to see how the situation evolves. I hope things will get better soon, but I fear this won’t be the case!
But, instead of flying to China, I’ve just now booked a flight to MILAN! Yes, I will be there from 4th to 12th, so give me a shout out if you will be around.
But today, before I get busy packing, I want to share with you this low-carb pasta dish which I made for myself on Sunday. Low-carb pasta? you might be wondering, well yes! With the new line of Zero&Light Pasta, you can enjoy PASTA with no guilt! And did I mention it is also GLUTEN-FREE?
This recipes is also great if you are following a Keto diet!
- 35 g Light & Zero (detox)
- 1 large fennel bulb
- 1 lean turkey sausage
- 1/4 cup dry white wine
- Salt and ground black pepper
- a few fennel seeds
- fennel leaves
Wash and slice the fennel. Break up the sausage and place it in a skillet, turn on medium heat and cook stirring from time to time until meat starts to brown. No need to add any extra oil, the meat will release some which will be just enough!
Pour in the wine, turn on high heat and let it evaporate. Next add the fennel, season with salt and pepper, pour in 1/2 cup of water and let it simmer, allowing the fennel to tender up. Last add some fresh fennel leaves, chopped.
While the sauce is cooking, measure up 35 g of Zero&Light Detox pasta.
Cook it in 1 liter of water for about 12 to 14 minutes. The pasta will absorb a lot of liquid growing in volume!
Add the pasta to the skillet and sauté it with the sauce on medium heat.
Serve it up and add a sprinkle of fennel seeds! Note: this is optional, but I do like that extra bit of crunchiness and flavour that they add to the dish.
