Creamy Apple Pie Spiced Oatmeal to power you up for the day! Fully vegan and naturally sweetened.
Monday blues anyone? I am actually in a super good mood. Just smashed a workout, following my new training and diet program by my new super trainer @supmaster, and with China being on holiday for Spring Festival, I have got a very less busy work day ahead of me!
So, let me take the time to share with you this utterly delicious oatmeal recipe! This bowl, oh this bowl is SO creamy and flavourful it will give you that extra push to get you out of bed on a Monday morning!
The recipe is dairy-free and fully vegan. Of course you can use cow milk if you prefer, but I would not recommend to replace the coconut milk, as it does actually add some special flavour and creaminess to the recipe.
For the almond butter, I used my homemade espresso almond butter, but standard almond butter would work just fine.
Ingredients (serves 2):
- 200 g coconut milk
- 100 g soy milk
- 100 g water
- 100 g rolled oats
- 20 g almond butter
- 1/2 tsp ground cinnamon
- 1 anice star
- 1 red apple
- 2 tbsp coconut oil (@gre3n)
- 15 ml orange juice
- 1/2 tsp vanilla extract
- 35 g maple syrup
Slice up the apple, remove the central seeds
In a skillet melt coconut oil and maple syrup
Add the sliced apple and cook for 1 min, then add orange juice and let cook for 4 min or until apple turns soft. Set aside
In a saucepan bring milk, anice star and cinnamon to a boil
add oats, turn down to low heat, let the oats simmer while you stir with a whisk (about 10-15 min). when creamy add the almond butter and stir it in. Turn the heat off.
Pour the oatmeal in 2 serving bowls, add the cooked apple together with their cooking juice.
Serve it right up!
If you have any leftover, just store it in your fridge and heat it up in your microwave when needed!
