Treat without the threat! Healthy version of the famous Nutella Cookies! Low-carb, gluten-free, dairy-free and vegan!
If you like the so popular Nutella cookies, you are going to LOVE this healthy version.
Fully vegan, low-carb, dairy-free and gluten-free this cookies just ROCKED my world and I am sure they will shake your boat too!
You are going to need my healthy and sugar-free protein nutella, or you can use any type of all natural protein chocolate hazelnut spread!
The cookies are made with a mix of flours to make them gluten-free and low-carb!
Ingredients (makes 8 cookies):
- 120 g cashew butter (no sugar added)
- 2 tbsp erythritol sugar
- 40 g soy flour
- 8 g coconut flour
- 2 tbsp soy milk (or almond milk)
- 3 g xantham gum
- 1/4 cup protein nutella
Misure up 1/4 cup of cashew butter, it will need to be at room temperature
In a large bowl combine nut butter and sugar
Add the dry ingredients and slowly add the milk.
Just enough so the dough will come together. It needs to get smooth and soft, easy to handle but not sticky!
Roll out the though between 2 parchment papers. It needs to be 3 to 5 mm thick.
Using 2 round cookies cutters, one slightly larger than the other, cut our circles (you need 16), with the left over though, cut off small hearts – note: I couldn’t find my heart shape cookie cutter so had to do this by hand…. –
Using something round, like the lid of a bottle or a small jars, press down the centre of the bigger rounds. Press the hearts on top of the smaller rounds.
Bake the cookies in pre-heated oven at 180 c for 10 min. Remove from the oven and let cool down completely, then drop tsp of nutella in the centre of the larger rounds
cover with the smaller one and there you have made healthy, low-carb, gluten-free and vegan nutella cookies!
