Creamy, sweet healthy mousse made with no dairy and no refined sugar
If you are a pumpkin lover, LIKE I AM, you are going to go bonkers over this mousse. It is super healthy and calls for very simple and natural ingredients. Moreover it is also dairy-free!
It is so simple and quick, you can whip this up in no time!
I can see this as a perfect dessert to serve over Christmas holiday at your gatherings with friends and family.

Ingredients (makes 4 small or 2 large):
- 200 g pumpkin pure (I roast some pumpkin in the oven and then blend it)
- 1 eggs
- 100 ml coconut milk
- 1 tbsp honey or maple syrup
- 1/4 tsp ground ginger
- 1/2 tsp cinnamon + more for the top
- 1/4 tsp nutmeg
- 100 ml coconut cream (refrigerated)
For the filling, whisk all the ingredients together then blend them for a smooth texture.
In a saucepan, bring the mixture to a gentle boil on very low heat until it starts to thicken
Pour into serving classes and refrigerate for a few house. Before serving, top it off with a dust of ground cinnamon and a spoonful of coconut cream.
