Spicy stir-fry with cabbage and low-carb “rice”
Hello peeps, how are you doing? As customs now, Monday here equals to a vegan day. All my meals are fully plant-based. This in an attempt to help the planet and also pay more attention to my overall health.
Today for lunch I made this super simple yet SOOOO yummy stir-fry with cabbage and chilli. I served it up with some konjac rice, you can also use cauliflower rice, these are both low carb options. Else, this goes divine with some steamed or boiled basmati as well!
- 400 g cabbage
- 2 tbsp organic soy sauce
- 1 tbsp extra virgin olive oil (@alcenero)
- 2 cloves garlic
- 2 fresh red chilis
- 2 cups cauliflower rice (option 1)
- 200 g Konjac rice (option 2)
Wash and chop up the cabbage.
In a large skillet or wok heat up oil with garlic and sliced chilis. Sauté for 2 minutes then add the cabbage and soy sauce. Stir all the ingredients together then cover with a lid and let cook on low heat until cabbage is cooked.
Serve this up with konjac rice or cauliflower rice for a low-carb meal.
If you don’t mind the carbs, just pair these spicy stir-fried veggies with some steamed or boiled white rice.
Add some white sesame seeds as well for some extra fats and protein.
