Gluten-free and low-carb version of the traditional Italian Cantucci cookies that taste just like the originals!
Who said no cookies when on diet? WHO? You can certainly be on a restrictive eating plan and eat your cookie too!
These fit version of the Cantucci cookies is fantastic and will make you go bonkers over them! They are crunchy and rich in flavour with dark chocolate chips and whole almonds.
Here is the recipe!
Ingredients (makes about 7 cookies):
- 80 g almond flour
- 15 g GF oat flour
- 30 g Erythol sugar
- 1/2 tsp baking powder
- 1/2 tsp xantham gum
- 25 g dark chocolate chips
- 20 g all natural almonds
- 40 egg white
In a bowl combine all dry ingredients
Pour in the egg white and mix until you get a soft and smooth dough
Fold in almonds and chocolate chips
Next shape the dough into a long oval shape
Bake in pre-heated oven at 120 C for 20-25 min or until golden in color. Slice up the loaf into about 7 pieces, place them face up and keep baking for 10 more minutes or until crunchy. I like to flip them halfway through.
Let the cookies cool down completely, then store them in a airtight container
