Extravagant way to use cauliflower in a grain-free and dairy-free Paleo porridge!
We have seen it in all forms and shapes, we have used it to make pizza, rice, meatballs. Cauliflower is the KING of most Paleo and low-carb recipes!
However I am pretty sure you have not yet seen it used to make porridge, am I right?
Well, this recipe is going to rock your boat. It is creamy, slightly sweet and delicious and, I promise, you will barely taste the cauliflower.
- 1 cup cauliflower rice
- 1 c unsweetened almond milk
- 1/2 mashed banana
- 1/4 tsp ground cinnamon
- a pinch of salt
- 1 tbsp ground flaxseeds
- 1/2 tsp vanilla extract
- fresh fruits
- almond butter
Wash up the cauliflower and cut off florets
Pulse florets into a food processor until they turn into “rice”
In a large saucepan heat up cauliflower rice, almond milk, cinnamon, ground flax and sea salt.
Cook for 15-20 mins until thick. Meanwhile mash up half a ripe banana
Remove from the heat and stir in mashed banana.
Pour into serving bowl and top it off with fresh fruit, nuts, and seeds.
One bowl of this porridge (without toppings) provides:
