Satisfy your sweet-tooth with these FIT chocolate cookies!
I am NEVER going to turn down a cookie, NEVER! It is absolutely the one thing I could not live without. So no matter if I am trying to watch my diet or not, I always make sure I have cookies on a daily base.
Which is also why I have come up and share with you many different types of cookie recipes, from standard sugary and butter-filled one to healthier low-carb, gluten-free and high-protein versions.
Today’s recipe will give you FIT CHOCOLATY cookies, which will make your skirt fly up!
Oat, almond and rice flours all happen to be used in this recipe, to make your cookies GF; coconut oil replace the butter to make them also dairy-free and easy to digest. For the filling I have used Foodspring protein chocolate spread and Religious chocolate cashew butter, but you can really use anything you like!
Ingredients (makes 6 cookies):
- 40 g GF oat flour
- 40 g rice flour
- 15 g almond flour
- 10 g dark cacao powder
- 10 ml melted coconut oil
- 1 tbsp honey
- 30 g egg white
- 1/2 tsp baking powder
- 1/4 tsp salt
- almond milk (as needed)
- chocolate hazelnut spread and/or chocolate cashew butter
In a large bowl combine all the dry ingredients
Give it a stir to mix them all together
Add the wet ingredients and using a spoon mix them together. Add just enough almond milk needed so that the mixture comes together into a soft dough. Wrap up the dough into plastic wrap and refrigerate it for 30 min.
Using a rilling pin roll out the dough in between parchment paper into a 3-4 mm disc
with round cookie cutters cut out 12 pieces and using a smaller one, makes centra holes in 6 of them.
Bake in preheated oven at 180 for 15 min. Let the cookies cool down completely then drop tsp of the filling you have selected on 6 of the whole circles. I used protein chocolate spread
and chocolate cashew butter
They were both delicious!
